Description

A delicious and healthy Mediterranean dish featuring roasted eggplant, perfect as a side or main course.


Ingredients

  • 2 medium eggplants
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants into 1-inch thick rounds.
  3. In a large bowl, combine olive oil, salt, pepper, garlic powder, and smoked paprika.
  4. Add the eggplant slices to the bowl and toss until well coated.
  5. Arrange the eggplant slices in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
  7. Remove from the oven and sprinkle with fresh parsley and feta cheese, if using.
  8. Serve warm as a side dish or over a salad.

  • For a spicier version, add red pepper flakes to the seasoning mix.
