- 2 medium eggplants
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants into 1-inch thick rounds.
- In a large bowl, combine olive oil, salt, pepper, garlic powder, and smoked paprika.
- Add the eggplant slices to the bowl and toss until well coated.
- Arrange the eggplant slices in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
- Remove from the oven and sprinkle with fresh parsley and feta cheese, if using.
- Serve warm as a side dish or over a salad.
Notes
- For a spicier version, add red pepper flakes to the seasoning mix.
- Eggplants can be salted before cooking to reduce bitterness.
