Description

A vibrant twist on traditional quesadilla, filled with fresh vegetables and Mediterranean flavors.


Ingredients

Scale
  • 4 flour tortillas
  • 1 cup shredded cheese (like mozzarella or feta)
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced olives
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1 teaspoon olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  3. Layer with spinach, bell peppers, olives, sun-dried tomatoes, and the remaining cheese.
  4. Fold the tortilla in half and cook for 2-3 minutes until golden brown.
  5. Flip and cook the other side for another 2-3 minutes.
  6. Remove from skillet, cut into wedges, and serve warm.

Notes

Use fresh ingredients for the best flavor and texture. Don’t overfill the tortillas to avoid difficulty in flipping.
