Description

A bright and refreshing Mediterranean Pasta Salad bursting with vibrant flavors, perfect for gatherings and cozy family dinners.


Ingredients

  • 8 oz pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup olives, sliced (optional)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. Combine in a large bowl the cherry tomatoes, cucumber, feta cheese, red onion, and olives (if using).
  3. Whisk together in a small bowl the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Add the cooled pasta to the vegetables and pour the vinaigrette over the salad.
  5. Toss everything together gently to combine.
  6. Serve immediately or refrigerate for an hour to let the flavors meld.

Notes

Allowing the salad to sit for at least an hour enhances flavor. Use fresh ingredients for best results.
