Ingredients

- 1 cup orzo pasta
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions, then rinse under cold water and drain.
- Combine in a large bowl the cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
- Whisk together in a small bowl the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled or at room temperature.
Notes
For optimal flavor, chill the salad in the fridge for at least 30 minutes before serving. Fresh herbs can enhance the dish significantly.
