Description

A vibrant salad filled with fresh vegetables, orzo pasta, and tangy flavors that embodies the Mediterranean spirit.


Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the orzo pasta according to package instructions, then rinse under cold water and drain.
  2. Combine in a large bowl the cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  3. Whisk together in a small bowl the olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

For optimal flavor, chill the salad in the fridge for at least 30 minutes before serving. Fresh herbs can enhance the dish significantly.
