Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, oregano, paprika, salt, and pepper.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add cherry tomatoes and olives, cooking for 3-4 minutes until the tomatoes soften.
  6. Return the chicken to the skillet, sprinkle with feta cheese, and cook for an additional 2 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with a side of steamed vegetables for a complete meal.
