Description

A refreshing and healthy Mediterranean-inspired salad perfect for spring dinners.


Ingredients

Scale
  • 4 cups chopped celery
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the chopped celery, cherry tomatoes, red onion, and Kalamata olives.
  2. Drizzle the olive oil and red wine vinegar over the salad.
  3. Add salt and pepper to taste, and toss everything together until well mixed.
  4. Sprinkle the crumbled feta cheese on top before serving.
  5. Serve chilled or at room temperature.
