Description

A delicious and healthy Mediterranean-inspired breakfast sandwich packed with flavor and nutrients.


Ingredients

  • 2 slices of whole grain bread
  • 1 large egg
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup spinach, fresh
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Crack the egg into the skillet and cook to your desired doneness.
  3. While the egg is cooking, toast the whole grain bread.
  4. Once the egg is cooked, place it on one slice of toasted bread.
  5. Top the egg with crumbled feta cheese, fresh spinach, and halved cherry tomatoes.
  6. Season with salt and pepper to taste.
  7. Place the second slice of bread on top to complete the sandwich.
