Description

A delicious and healthy Mediterranean bowl featuring turkey meatballs, perfect for a nutritious dinner.


Ingredients

Scale
  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup Kalamata olives, sliced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes, or until cooked through and golden brown.
  5. In a separate bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and olives.
  6. Drizzle with olive oil and lemon juice, and toss to combine.
  7. Serve the meatballs over the quinoa salad and garnish with fresh parsley.
