Description

A vibrant and healthy Mediterranean bean salad that combines a variety of beans and fresh vegetables, perfect for any meal.


Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, black beans, and kidney beans.
  2. Add the cherry tomatoes, cucumber, red onion, and parsley to the bowl.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the bean and vegetable mixture and toss to combine.
  5. Let the salad sit for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.

  • This salad can be made a day in advance for better flavor.
