- 100 g water
- 115 g unsalted butter, softened to room temperature
- 100 g almond flour
- 60 g powdered sugar
- 1 tablespoon matcha powder
- ⅛ teaspoon salt
- 2 large eggs, room temperature
- 4 croissants
- Sliced almonds, for topping
- Powdered sugar, for dusting
Instructions
- Make Simple Syrup: In a small saucepan over medium heat, combine sugar and water. Stir until the sugar dissolves. Remove from heat and cool. Use 1/3 of the syrup immediately and store the rest in the refrigerator.
- Prepare Matcha Frangipane: Preheat the oven to 350°F (175°C). In a bowl, beat softened butter until creamy. Gradually mix in almond flour, powdered sugar, matcha, and salt. Add eggs one at a time until smooth. Pipe into a bag.
- Prepare Croissants: Slice croissants lengthwise and brush cut sides with cooled syrup.
- Fill Croissants: Pipe matcha frangipane onto the bottom halves and reassemble. Pipe more frangipane on top.
- Add Toppings: Sprinkle sliced almonds on top.
- Bake: Place in the oven and bake for 25-30 minutes until golden brown.
- Finish and Serve: Dust with powdered sugar and serve warm or allow to cool.
