Delightful croissants filled with almond frangipane and matcha for a comforting breakfast treat.


Ingredients

  • 100 g granulated sugar
  • 100 g water
  • 115 g unsalted butter, softened to room temperature
  • 100 g almond flour
  • 60 g powdered sugar
  • 1 tablespoon matcha powder
  • ⅛ teaspoon salt
  • 2 large eggs, room temperature
  • 4 croissants
  • Sliced almonds, for topping
  • Powdered sugar, for dusting


Instructions

  1. Make Simple Syrup: In a small saucepan over medium heat, combine sugar and water. Stir until the sugar dissolves. Remove from heat and cool. Use 1/3 of the syrup immediately and store the rest in the refrigerator.
  2. Prepare Matcha Frangipane: Preheat the oven to 350°F (175°C). In a bowl, beat softened butter until creamy. Gradually mix in almond flour, powdered sugar, matcha, and salt. Add eggs one at a time until smooth. Pipe into a bag.
  3. Prepare Croissants: Slice croissants lengthwise and brush cut sides with cooled syrup.
  4. Fill Croissants: Pipe matcha frangipane onto the bottom halves and reassemble. Pipe more frangipane on top.
  5. Add Toppings: Sprinkle sliced almonds on top.
  6. Bake: Place in the oven and bake for 25-30 minutes until golden brown.
  7. Finish and Serve: Dust with powdered sugar and serve warm or allow to cool.
