Description

A delightful and healthy chickpea dish perfect for a spring dinner.


Ingredients

Scale
  • 2 cans chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 cup spinach, chopped
  • Juice of 1 lemon


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in bell pepper, cumin, paprika, salt, and pepper; cook for another 5 minutes.
  4. Add chickpeas and vegetable broth, bring to a simmer.
  5. Stir in chopped spinach and lemon juice, cook until spinach is wilted.
  6. Serve warm and enjoy your meal!
