- 1/2 cup coconut milk

Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Cook the chicken in the skillet until browned on both sides, about 5 minutes per side.
- Add minced garlic and cherry tomatoes to the skillet, cooking for an additional 2 minutes.
- Pour in the coconut milk and bring to a simmer.
- Stir in the chopped basil.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
