Description

A refreshing and flavorful poke cake infused with zesty lime and creamy sweetness, perfect for summer gatherings and celebrations.


Ingredients

  • 1 box yellow cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 packet lime gelatin
  • 1 cup sweetened condensed milk
  • 1/2 cup freshly squeezed lime juice
  • Whipped cream for topping
  • Lime slices for garnish


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine the cake mix, water, vegetable oil, and eggs in a large bowl. Mix well until smooth.
  3. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick comes out clean.
  4. Allow the cake to cool completely.
  5. Poke holes all over the cake using a fork once cooled.
  6. Mix the lime gelatin, sweetened condensed milk, and lime juice in a separate bowl until well combined.
  7. Pour the gelatin mixture over the cake, making sure to fill the holes.
  8. Chill the cake in the refrigerator for at least 2 hours.
  9. Top with whipped cream and garnish with lime slices before serving.

For a gluten-free option, choose a gluten-free yellow cake mix.
