Ingredients

  • 1/2 cup chia seeds
  • 1 ripe mango, diced
  • 1 ripe dragon fruit, diced
  • 2 tablespoons honey or maple syrup (optional)

Instructions

  1. In a bowl, combine coconut milk, chia seeds, honey or maple syrup, and vanilla extract.
  2. Stir well and let it sit for about 10 minutes, then stir again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
  4. Once thickened, layer the chia pudding with diced mango and dragon fruit in serving glasses.
  5. Garnish with additional fruit or nuts if desired and serve chilled.
