Description

A comforting and healthy soup perfect for spring dinners, packed with vegetables and legumes.


Ingredients

Scale
  • 2 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1 cup green beans, trimmed and chopped
  • 1 cup cooked lentils
  • 1 cup diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the vegetable broth over medium heat.
  2. Add the chopped carrots, celery, and onions. Sauté for about 5 minutes until the vegetables start to soften.
  3. Stir in the green beans, cooked lentils, and diced tomatoes.
  4. Add the dried thyme and basil, and season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes.
  6. Serve hot and enjoy your healthy spring dinner!
