Ingredients

- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 1 cup green beans, trimmed and chopped
- 1 cup cooked lentils
- 1 cup diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the chopped carrots, celery, and onions. Sauté for about 5 minutes until the vegetables start to soften.
- Stir in the green beans, cooked lentils, and diced tomatoes.
- Add the dried thyme and basil, and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes.
- Serve hot and enjoy your healthy spring dinner!
