Ingredients

  • 1 package cornbread mix
  • 1 cup shredded cheese
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 cup diced bell peppers
  • 1/2 cup chopped green onions
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cornbread mix, cheese, corn, black beans, bell peppers, and green onions.
  3. In another bowl, whisk together the eggs, milk, chili powder, salt, and pepper.
  4. Pour the egg mixture into the dry ingredients and stir until just combined.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Let it cool for a few minutes before serving.
