Description

A comforting and nutritious lentil soup recipe that warms the heart and nourishes the body.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery, and sauté until softened.
  4. Stir in the garlic, cumin, and thyme, and cook for another minute.
  5. Add the lentils and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a creamier texture, blend a portion of the soup before serving.
  • This soup can be stored in the refrigerator for up to 5 days.
  • Feel free to add other vegetables like spinach or tomatoes for extra flavor.
