- 2 celery stalks, diced

Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened.
- Stir in the garlic, cumin, and thyme, and cook for another minute.
- Add the lentils and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
