Ingredients

- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1 package ladyfinger cookies
- 1/2 cup strong brewed coffee (cooled)
- 1/4 cup lemon-flavored liqueur (optional)
- Fresh mint leaves for garnish
Instructions
- Whisk together the mascarpone cheese, heavy cream, powdered sugar, lemon juice, and lemon zest until smooth and creamy.
- Combine the cooled coffee and lemon liqueur in a shallow dish.
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them.
- Layer the dipped ladyfingers in the bottom of a serving dish.
- Spread half of the lemon mascarpone mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and lemon mixture.
- Cover and refrigerate for at least 240 minutes, or overnight for best results.
- Garnish with fresh mint leaves before serving.
Notes
For a non-alcoholic version, omit the lemon liqueur. Fresh ingredients yield the best flavor and texture.
