- 1 package of puff pastry
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup fresh raspberries
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1 egg, beaten (for egg wash)
- 1 tablespoon all-purpose flour (for dusting)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry on a floured surface and cut it into squares.
- Mix the softened cream cheese, powdered sugar, lemon juice, and lemon zest in a bowl until smooth.
- Place a spoonful of cream cheese mixture and a few raspberries in the center of each pastry square.
- Fold the corners of the pastry over the filling to form a pocket and brush with beaten egg.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For a sugar-free version, use sugar substitutes like stevia or monk fruit. Best served fresh but can be stored in the fridge for up to 3 days.
