- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs

- 1/4 cup fresh lemon juice
- 1/2 cup buttermilk
- 2 tablespoons poppy seeds
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream the butter and sugar in a separate bowl until light and fluffy.
- Add the eggs, lemon zest, and lemon juice, mixing until combined.
- Alternate adding the dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry ingredients.
- Stir in poppy seeds.
- Divide the batter into the muffin tin and bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
