Description

Ingredients

  • 4 chicken breasts
  • 1 cup Pecorino Romano cheese, grated
  • 1 cup breadcrumbs
  • 2 lemons (zest and juice)
  • 1/2 cup flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix breadcrumbs, Pecorino cheese, lemon zest, salt, and pepper in a shallow dish.
  3. Dredge each chicken breast in flour.
  4. Dip in beaten eggs.
  5. Coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear the chicken breasts until golden on both sides.
  8. Transfer chicken to a baking dish.
  9. Bake for 20-25 minutes until cooked through.
  10. Combine lemon juice and heavy cream in a saucepan.
  11. Bring to a simmer.
  12. Stir in parsley, season with salt and pepper.
  13. Serve the chicken with the creamy lemon sauce drizzled on top.

Notes

For an extra flavor boost, let the breadcrumb mixture sit for about 10 minutes before dredging the chicken.
