- 1 pound rotini pasta
- 1 cup Italian dressing
- Juice of 2 lemons
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
Instructions
- Boil the pasta according to package instructions (10 to 11 minutes).
- Drain the pasta and rinse it under cold water to cool it off, making sure to drain it really well.
- In a large bowl, mix the dressing, lemon juice, cheese, parsley, and seasonings.
- Add the pasta to the bowl and stir to coat it in the dressing.
- Serve it right away, or chill it for a couple of hours to enhance the flavors.
- Stir again before serving if it has been stored.
Notes
Allowing the salad to chill for a couple of hours helps the flavors meld beautifully.
