Description
Delicious and easy-to-make lemon oatmeal crumble bars that are perfect for summer baking and can be kept at room temperature.
Ingredients

- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the rolled oats, flour, brown sugar, granulated sugar, melted butter, salt, and baking soda until crumbly.
- Press half of the mixture into the bottom of a greased 9×9 inch baking pan.
- In another bowl, combine the lemon juice and lemon zest, then pour it over the crust in the pan.
- Sprinkle the remaining crumble mixture on top of the lemon layer.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.

- These bars can be stored at room temperature for up to a week.
- Great for picnics or as a dessert to take to work.
- Feel free to adjust the sweetness by adding more or less sugar.
