These Lemon Lavender Cookies are soft, buttery, and delicately floral. Brightened with fresh lemon zest and calming lavender, they’re perfect for spring celebrations or a peaceful tea moment.

- ½ cup (1 stick) unsalted butter, softened
- ¾ cup granulated sugar
- 1 egg
- 1 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp dried culinary lavender, finely chopped
- Optional Glaze:
- ½ cup powdered sugar
- 1 tbsp lemon juice
- ½ tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream butter and sugar until light and fluffy. Add egg, lemon juice, and zest. Mix until combined.
- In a separate bowl, whisk together flour, baking soda, salt, and chopped lavender.
- Combine dry ingredients with wet until just mixed. Don’t overwork the dough.
- Scoop tablespoon-sized dough balls onto baking sheet. Bake for 9–11 minutes until edges are just golden.
- Cool on wire rack. If glazing, mix powdered sugar, lemon juice, and zest. Drizzle over cooled cookies.
Notes
Use only culinary-grade dried lavender. These cookies are best enjoyed within 3 days or frozen without glaze for up to 2 months.
