Ingredients

- 4 chicken breasts
- 2 cups of rice
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes.
- In a large oven-safe pot, add the rice and pour in the chicken broth.
- Place the marinated chicken breasts on top of the rice.
- Cover the pot with a lid or aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- For extra flavor, consider adding vegetables like peas or carrots to the rice.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish pairs well with a side salad.
