Lemon Herb Chicken and Rice

Description

A delicious and flavorful dish combining tender chicken with aromatic herbs and fluffy rice.


Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes.
  4. In a large oven-safe pot, add the rice and pour in the chicken broth.
  5. Place the marinated chicken breasts on top of the rice.
  6. Cover the pot with a lid or aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
  7. Remove from the oven and let it rest for 5 minutes before serving.

Notes

  • For extra flavor, consider adding vegetables like peas or carrots to the rice.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish pairs well with a side salad.
