Description

Delicious and tangy lemon crumb bars that are perfect for summer baking.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine 1 cup flour, 1/2 cup sugar, softened butter, and salt. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. Bake the crust for 15 minutes or until lightly golden.
  5. In another bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling over the baked crust.
  7. Bake for an additional 20-25 minutes until the filling is set.
  8. Allow to cool completely before cutting into bars.
