Delicious and tangy lemon crumb bars that are perfect for summer baking.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a mixing bowl, combine 1 cup flour, 1/2 cup sugar, softened butter, and salt. Mix until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 15 minutes or until lightly golden.
- In another bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the baked crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before cutting into bars.

- For a sweeter taste, adjust the sugar in the filling.
- These bars can be stored in the refrigerator for up to a week.
