- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup powdered sugar
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- Combine water and butter in a saucepan. Bring to a boil.
- Stir in flour and salt until the mixture forms a ball and pulls away from the sides of the pan.
- Remove from heat and let it cool for a few minutes.
- Beat in eggs one at a time until the mixture is smooth.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for about 25-30 minutes until golden brown.
- Whip the heavy cream with powdered sugar, lemon zest, lemon juice, and vanilla extract until stiff peaks form while the puffs cool.
- Cut a slit in each puff and fill with lemon cream once they are cool.
- Serve immediately and enjoy!

Ensure water and butter are boiling before adding flour for best results. Try different flavors like coconut or orange for variations.
