Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add the diced chicken breast and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Sauté minced garlic in the same skillet for 1 minute until fragrant.
  4. Pour in the heavy cream, lemon zest, and lemon juice, stirring well to combine. Bring to a gentle simmer.
  5. Add the gnocchi to the skillet and cook according to package instructions until they float to the top, about 2-3 minutes.
  6. Return the chicken to the skillet and toss to combine. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
