- 2 cups almond flour
- 1/2 cup honey or maple syrup
- 4 large eggs
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the almond flour, honey (or maple syrup), eggs, lemon juice, lemon zest, baking powder, and salt.
- Mix until well combined and smooth.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve as is or with a dusting of powdered sugar.
