Description

A delightful and moist lemon blueberry cake that combines the tartness of lemons with the sweetness of blueberries.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup buttermilk
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture.
  6. Fold in the lemon zest and blueberries gently to avoid breaking the berries.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a stronger lemon flavor, add more lemon zest or a splash of lemon juice to the batter.
  • Fresh blueberries work best, but you can use frozen blueberries if necessary; just do not thaw them before adding.
  • This cake can be served plain or with a dusting of powdered sugar on top.
