- 3 cups graham cracker crumbs
- 1/2 cup sugar
- 12 tbsp unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 14 ounces sweetened condensed milk
- 1 tsp vanilla extract
- 3/4 cup Key lime juice
- 1 tbsp lime zest
- 2 tbsp flour
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp vanilla extract
- 2 cups heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and sugar in a large bowl.
- Pour in melted butter and stir until evenly moist.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes until set.
- Allow to cool.
- Beat 24 ounces of softened cream cheese in a large bowl until smooth.
- Add 1 cup of sugar and mix.
- Incorporate eggs one by one.
- Mix in sweetened condensed milk and vanilla extract.
- Stir in Key lime juice, lime zest, and flour.
- Pour mixture over the cooled crust.
- Bake for 55-60 minutes until slightly jiggly.
- Cool in the oven for 1 hour and refrigerate for at least 4 hours.
- For whipped cream, beat 8 ounces of cream cheese, 1 cup powdered sugar, and 1 tbsp vanilla extract until combined.
- Whip in 2 cups heavy cream until stiff peaks form.
- Spread over chilled cheesecake before serving.
Notes
Allowing the cheesecake to set for at least 4 hours enhances the flavors.
