- 1 lb ribeye steak, thinly sliced
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 2 cups mozzarella cheese, shredded
- 1/4 cup cream cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 package of low-carb tortillas
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, sauté until softened.
- Add the ribeye steak to the skillet, season with garlic powder, salt, and pepper, and cook until browned.
- Stir in cream cheese and half of the mozzarella cheese until melted and combined.
- Remove from heat and let cool slightly.
- Place a portion of the steak mixture onto each low-carb tortilla.
- Top with remaining mozzarella cheese.
- Roll up the tortillas tightly and place seam-side down in a baking dish.
- Bake at 350°F (175°C) for 15-20 minutes until golden and crispy.
Notes
- For extra flavor, add Worcestershire sauce to the steak mixture.
- These rolls can be made ahead of time and stored in the refrigerator.
