Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup cream cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 package of low-carb tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and bell peppers, sauté until softened.
  3. Add the ribeye steak to the skillet, season with garlic powder, salt, and pepper, and cook until browned.
  4. Stir in cream cheese and half of the mozzarella cheese until melted and combined.
  5. Remove from heat and let cool slightly.
  6. Place a portion of the steak mixture onto each low-carb tortilla.
  7. Top with remaining mozzarella cheese.
  8. Roll up the tortillas tightly and place seam-side down in a baking dish.
  9. Bake at 350°F (175°C) for 15-20 minutes until golden and crispy.

Notes

  • For extra flavor, add Worcestershire sauce to the steak mixture.
  • These rolls can be made ahead of time and stored in the refrigerator.
  • Serve with a side of low-carb dipping sauce for added taste.
