A delightful take on the traditional Kentucky butter cake transformed into easy-to-make cookies that offer a warm, buttery hug in every bite.

- 1 stick butter, softened (8 tbsp or 1/2 cup)
- 1/3 cup granulated sugar
- 2 tbsp brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 & 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp butter (for sauce)
- 1/4 cup powdered sugar (for sauce)
- 2 tsp water (for sauce)
- 1/4 tsp vanilla extract (for sauce)
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar in a stand mixer until smooth.
- Add the egg and vanilla extract; mix until combined.
- Gradually add the flour, baking powder, and salt, mixing until the dough forms.
- Scoop 6 equally sized balls of dough and roll them between your palms.
- Place the dough balls on the baking sheet and gently press them to about 2 cm thick.
- Bake for 10 minutes.
- Melt the butter, powdered sugar, water, and vanilla extract in a small saucepan over medium-low heat, stirring until smooth.
- Remove from heat and let it rest for 5 minutes.
- Brush the warm cookies with the butter sauce and sprinkle with powdered sugar after the glaze sets.
Notes
Keep cookies soft and chewy by avoiding overbaking. Experiment with adding nuts or chocolate chips for a twist.
