Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the melted butter, milk, and eggs.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced peaches gently.
- Fill each muffin cup halfway with batter, then drizzle caramel sauce on top, and cover with more batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before serving, drizzling additional caramel sauce on top if desired.
Notes
- For a richer flavor, use brown sugar instead of granulated sugar.
