Description

A delicious and hearty casserole inspired by the legendary actor John Wayne, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) pinto beans, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the chopped onions and bell peppers to the skillet and sauté until softened.
  4. Stir in the kidney beans, pinto beans, diced tomatoes, corn, and taco seasoning. Mix well.
  5. In a greased casserole dish, layer half of the beef mixture, followed by half of the cheddar cheese and half of the crushed tortilla chips.
  6. Repeat the layers with the remaining ingredients.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add more vegetables like zucchini or mushrooms for extra nutrition.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add jalapeños or use spicy taco seasoning.
