Ingredients

- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) pinto beans, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped onions and bell peppers to the skillet and sauté until softened.
- Stir in the kidney beans, pinto beans, diced tomatoes, corn, and taco seasoning. Mix well.
- In a greased casserole dish, layer half of the beef mixture, followed by half of the cheddar cheese and half of the crushed tortilla chips.
- Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like zucchini or mushrooms for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or use spicy taco seasoning.
