Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon jerk seasoning
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the jerk seasoning and cook for another minute.
  4. Add the diced sweet potatoes and bell pepper, stirring to coat.
  5. Pour in the coconut milk and vegetable broth, bring to a simmer.
  6. Reduce heat and let it cook for about 20 minutes, or until sweet potatoes are tender.
  7. Stir in the black beans and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste before serving.
