Description

A delightful twist on traditional focaccia enriched with sweet raspberry preserves, perfect for brunch gatherings.


Ingredients

Scale
  • 1.75 cups Warm Water (105-115°F)
  • 2 tsp Sugar (optional if using instant yeast)
  • 1 packet Active Dry Yeast
  • 2 cups Bread Flour (can substitute with all-purpose flour)
  • 2 cups All-Purpose Flour
  • 2 tsp Salt
  • 6 tbsp Olive Oil (divided)
  • 1 jar Raspberry Preserves (can swap with other jams)
  • 2 cups Confectioners’ Sugar
  • 2-4 tbsp Whole Milk (as needed)


Instructions

  1. Warm 1.75 cups of water in a microwave until it reaches 105-115°F.
  2. Dissolve 2 tsp of sugar in the warm water, if using instant yeast.
  3. Sprinkle 1 packet of active dry yeast over the warm water and let it sit for about 5-10 minutes until frothy.
  4. Combine 2 cups of bread flour and 2 cups of all-purpose flour into a large mixing bowl.
  5. Add 2 tsp of salt to the flour mixture and whisk together.
  6. Make a well in the center of the flour mixture and pour in the yeast mixture.
  7. Add 4 tbsp of olive oil into the well and stir until combined.
  8. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  9. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  10. Preheat your oven to 375°F.
  11. Punch down the risen dough and transfer it to a greased baking sheet.
  12. Spread the dough into a rectangle, about 1 inch thick.
  13. Make dimples across the surface of the dough using your fingers.
  14. Spread the raspberry preserves evenly across the dimples.
  15. Drizzle 2 tbsp of olive oil over the top of the dough.
  16. Bake for 25-30 minutes, or until golden brown.
  17. Allow the focaccia to cool slightly once removed from the oven.
  18. Whisk together 2 cups of confectioners’ sugar and 2-4 tbsp of whole milk until smooth.
  19. Drizzle the icing over the warm focaccia and let it set before slicing.
