A delicious and fun appetizer that combines the flavors of jalapeño poppers with crispy onion rings.
Ingredients

- 2 large onions
- 1 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced jalapeños (fresh or pickled)
- 1/2 cup breadcrumbs
- 1 cup flour
- 2 eggs, beaten
- Oil for frying
Instructions
- Peel and slice the onions into thick rings, separating the rings.
- In a bowl, mix together the cream cheese, cheddar cheese, and jalapeños until well combined.
- Stuff each onion ring with the cheese mixture.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each stuffed onion ring in flour, dip in eggs, and coat with breadcrumbs.
- Heat oil in a deep pan over medium heat.
- Fry the onion rings in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm with your favorite dipping sauce.

Notes
- For extra heat, use more jalapeños or add some hot sauce to the cheese mixture.
