A comforting and hearty Italian Wedding Soup filled with meatballs, greens, and pasta.
Ingredients

- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 cups chicken broth
- 1 cup small pasta (like acini di pepe)
- 4 cups fresh spinach or escarole
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese for serving
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil over medium-high heat.
- Add the meatballs to the boiling broth and cook for about 10 minutes.
- Add the pasta and cook according to package instructions until al dente.
- Stir in the spinach or escarole and cook until wilted.
- Remove from heat and stir in fresh parsley.
- Serve hot, garnished with additional Parmesan cheese.
Notes
- For a lighter version, use turkey instead of beef and pork.
- Feel free to add other vegetables like carrots or celery for extra flavor.
- This soup can be made ahead of time and freezes well.
