- 1 cup cooked Arborio or sushi rice
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 4 large zucchini slices or 4 nori sheets
- 1/2 cup basil pesto
- 4 mozzarella sticks or 1/2 cup shredded mozzarella
- 1/2 cup roasted red pepper, sliced
- 1/4 cup chopped sun-dried tomatoes
- 1 tablespoon olive oil
- Balsamic glaze for drizzle (optional)
Instructions
- Cook rice according to package and stir in vinegar and salt. Let cool slightly.
- Lay out zucchini ribbons or nori on a flat surface or sushi mat.
- Spread a thin layer of rice, leaving edges clear.
- Spread pesto, then layer mozzarella, red peppers, and sun-dried tomatoes.
- Roll tightly using a bamboo mat or clean towel. Wrap and chill for 15 minutes.
- Slice gently with a sharp knife and drizzle with olive oil or balsamic glaze if desired.
Notes
Swap nori with cucumber or rice paper for extra variety. For a vegan version, use plant-based cheese. Always slice rolls with a wet knife for clean cuts. Best served chilled!
