Ingredients

  • 2 cups peach preserves (for filling)
  • Red and yellow food coloring (for coloring the cookies)
  • Powdered sugar (for dusting)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the butter and sugar in a mixing bowl until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Combine the flour and baking powder in a separate bowl, then gradually add to the butter mixture until well combined.
  6. Shape the dough into small balls and place them on a lined baking sheet.
  7. Bake for about 15 minutes or until lightly golden.
  8. Slice each cookie in half and fill with peach preserves once cooled.
  9. Color the edges with red and yellow food coloring to resemble peach skins.
  10. Dust with powdered sugar before serving.
