Instructions
- Preheat oven to 350°F (175°C).
- Cream together the butter and sugar in a mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Combine the flour and baking powder in a separate bowl, then gradually add to the butter mixture until well combined.
- Shape the dough into small balls and place them on a lined baking sheet.
- Bake for about 15 minutes or until lightly golden.
- Slice each cookie in half and fill with peach preserves once cooled.
- Color the edges with red and yellow food coloring to resemble peach skins.
- Dust with powdered sugar before serving.
