Ingredients

- 2 cups dried white beans
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup sun-dried tomatoes, chopped
Instructions
- Soak the dried white beans in water overnight.
- Drain and rinse the beans, then cook them in a pot of boiling water until tender, about 1 hour.
- In a large bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
- Add the cooked beans, parsley, and sun-dried tomatoes to the bowl and toss to coat.
- Let the beans marinate for at least 30 minutes before serving.
- Serve chilled or at room temperature.
