Description

Ingredients

  • 1 cup currants or sultanas

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk.
  6. Fold in the currants or sultanas until evenly distributed.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
