Description

Traditional Irish Lemon Pudding Cake is a delightful dessert with a light fluffy cake layer on top and a creamy lemon pudding base underneath. With bright citrus flavor and a delicate texture, this classic Irish treat is perfect for family gatherings or cozy desserts.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs, separated
  • 1 cup milk
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together sugar, flour, and salt in a mixing bowl.
  3. In another bowl beat egg yolks, then add milk, lemon juice, lemon zest, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients until smooth.
  5. In a separate bowl beat egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter.
  7. Pour the mixture into the prepared cake pan.
  8. Bake for 30–35 minutes until the top is golden and set.
  9. Allow to cool slightly and dust with powdered sugar before serving.

Notes

Use fresh lemon juice and zest for the best flavor. Do not overmix after folding in the egg whites to maintain the light texture. This dessert can be served warm for a pudding-like texture or chilled for a firmer cake.
