Description

A hearty and comforting soup made with Irish bacon, fresh cabbage, and tender potatoes.


Ingredients

Scale
  • 4 slices of Irish bacon
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken broth
  • 2 medium potatoes, peeled and diced
  • 1/2 head of cabbage, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, cook the Irish bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot and sauté until translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the diced potatoes and cook until tender, about 10 minutes.
  5. Stir in the chopped cabbage and cook until wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with crumbled bacon and fresh parsley.

Notes

  • For a vegetarian version, substitute bacon with smoked paprika for flavor.
