- 3 large egg yolks
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
- Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and buttermilk until combined.
- Gradually mix the dry ingredients into the wet ingredients, blending until just combined.
- Fold in the diced apples and nuts (if using).
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle the turbinado sugar on top for a nice crunch.
- Bake in the preheated oven for 45–50 minutes, or until a toothpick comes out clean when inserted into the center.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Meanwhile, heat the whole milk in a saucepan over medium heat until steaming.
- Whisk together the egg yolks, granulated sugar, vanilla extract, and cornstarch in a bowl until smooth.
- Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
- Remove from heat and let cool slightly before serving.
- Serve slices of cake warm or at room temperature, drizzled with the creamy custard sauce.
