Description

These Instant Pot Potatoes and Carrots are the ultimate effortless side dish—tender, flavorful, and ready in minutes!


Ingredients

  • 2 cups of baby potatoes
  • 2 cups of carrots, sliced
  • 1 cup of vegetable broth
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried thyme

Instructions

  1. Place the baby potatoes and sliced carrots in the Instant Pot.
  2. Add the vegetable broth, salt, black pepper, olive oil, garlic powder, and dried thyme.
  3. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 8 minutes.
  5. Once the cooking time is complete, perform a quick release of the pressure.
  6. Open the lid and stir the vegetables gently before serving.

Notes

  • Adjust the seasoning according to your taste.
  • For a richer flavor, you can add butter instead of olive oil.
