- 1.5 cups granulated sugar
- 1 tsp baking soda

- 0.75 cups vegetable oil
- 3 large eggs
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 cup canned crushed pineapple (drained)
- 0.5 cups chopped pecans (optional)
- 8 oz cream cheese (softened)
- 0.5 cups unsalted butter (softened)
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Whisk together the all-purpose flour, granulated sugar, baking soda, salt, and ground cinnamon in a large bowl.
- Pour in the vegetable oil.
- Crack the eggs into the mixture and beat until well combined.
- Fold in the mashed bananas and drained crushed pineapple.
- Add the chopped pecans, if using, and mix gently.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then invert them onto wire racks to cool completely.
- Beat the softened cream cheese and unsalted butter together in a bowl until smooth.
- Gradually add powdered sugar and vanilla extract, beating until creamy and fluffy.
- Spread the cream cheese frosting between the cooled cakes and on top of the cake.
Notes
Using ripe bananas will enhance the flavor; don’t skip on the cooling time before frosting.
