A vibrant dish featuring marinated grilled chicken served over a creamy avocado rice mixture with a honey-lime glaze.

Ingredients

Scale
  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 ripe avocado
  • 2 cups cooked rice
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix honey and lime juice. Season chicken breasts with salt and pepper, then marinate in the honey-lime mixture for at least 30 minutes.
  2. Grill or sauté the chicken until fully cooked. Let it rest before slicing.
  3. In another bowl, mix cooked rice with diced avocado and chopped cilantro.
  4. To assemble, layer the rice mixture with sliced chicken in a stack or bowl. Serve immediately.

Notes

For a sugar-free option, consider using stevia, monk fruit, or allulose instead of honey.
