- 1 lb chicken breasts (boneless, skinless)
- 1/4 cup honey
- 2 limes (juiced)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper (to taste)
- 1 cup rice (uncooked)
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
- Prepare 1 cup of rice according to package directions and set aside to cool.
- Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until cooked through. Let it rest before slicing.
- Combine in a bowl the cooked rice, diced avocado, chopped cilantro, and sour cream. Gently fold until well mixed.
- Serve a scoop of the creamy avocado rice on plates, topped with sliced honey lime chicken and a drizzle of lime juice.
