Description

A vibrant and fresh dish combining marinated chicken with creamy avocado rice, celebrating the perfect harmony of honey and lime.


Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream


Instructions

  1. Whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  2. Prepare 1 cup of rice according to package directions and set aside to cool.
  3. Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until cooked through. Let it rest before slicing.
  4. Combine in a bowl the cooked rice, diced avocado, chopped cilantro, and sour cream. Gently fold until well mixed.
  5. Serve a scoop of the creamy avocado rice on plates, topped with sliced honey lime chicken and a drizzle of lime juice.
